Hogstar already enjoys more of the flavour character of a cask ale, which comes from brewing with the special lager malts and the small quantity of natural herb extracts. But this is further enhanced by the 28 day maturation period in one of our huge 120 barrel DPVs (dual purpose vessels). That's enough for 33,000 pints! By giving the lager the time it needs to mature, it adds a new dimension to the depth of flavour.
Unlike our normal vessels, the DPVs allow the yeast to sink to the bottom, so it can be run off, leaving the lager above it beautifully clear and bright.
Whilst a plentiful quantity of German, US and home-grown Cascade hops is used in the brew process, it is really the dry hopping with US Amarillo, Simcoe and Citra hops towards the end of its time in the DPV, that gives this lager its distinctive juiciness. But dry hopping at the Hogs Back Brewery is not a job for the faint hearted!
The resulting lager is delightfully crisp and highly hopped. What’s not to love?
