OTT features in Terra Tempo beer

Keep an eye out for The Adoration of the mystic lamb – an oak aged Flanders red ale – and the latest bottled beer from friend and fellow-brewer Terra Tempo, based here at the Brewery.

This oak-aged Flanders style red ale is brewed with our OTT beer, which has been “spontaneously” fermented, and then blended with port barrel-aged barley wine!

It uses wort from an Old Tongham Tasty [OTT] brew.  Wort is created during the first stage of brewing, when liquor (the correct brewing term for water) is added to the malt in the mash tun. The wort is heated to 65 °C to release all the sugars, which will be fermented by the yeast later on in the brewing process to produce the all-important alcohol.  The hot wort from our OTT black beer, brewed with 4 different malt styles – Pale, Crystal, Chocolate and Malted Wheat – was popped into a couple of kilderkins (large casks holding 144 pints).  These kilderkins, with the top deliberately left open, were placed in the cask racking area, so the natural yeast in the atmosphere could work its magic for 9 months. 

The OTT beer was then blended with a Terra Tempo barley wine that was based on our A over T recipe and aged in Port wine barrels and left to bottle condition for 2 months.

The beer is an interpretation of a traditional Flanders Red sour ale from Belgium but using all British ingredients and fermented with the yeast in the air around Tongham.

Expect malty and fruity, dates, blackberries, cherry, prunes with a sweet and sour balsamic taste. This beer will develop and age gracefully for many years to come.

At 9% it's a real connoisseur’s beer.  Look out for the Adoration of the mystic lamb, in the Brewery Shop.

The name Adoration of the Mystic Lamb comes from the Ghent Altarpiece – a painted panel altarpiece created in 1432 by Jan van Eyck for the Vijd Chapel in the church of St. John the Baptist, now St. Bavo Cathedral in Ghent, Belgium.
